With only two ingredients, these muffins are easy to make and yummy.
Ingredients
Directions
- Preheat oven to 350 °F (175 °C). Pour cake mix in a bowl.
- Add the crushed pineapple with juice.
- Mix together.
- Pour into prepared muffin tins spray with Pam or use muffin cups. These muffins don't rise much so pour close to top of muffin cup.
- Bake according to box for muffins.
- Optional to frost with light or fat free whipped topping, like Cool Whip.
- Note: to make pineapple angel food cake, take a box Angel Food cake mix and a 20 oz can of crushed pineapple in its own juice. With a mixer, mix cake mix with pineapple (do not drain) until smooth. Pour into a 9x13" pan that has been sprayed with cooking spray. Bake for 35 minutes at 350 °F.

As far as I can tell - the calories indicated here (20 per muffin) are totally wrong. Although above says 1 oz of cake mix...I don't understand that. Is that correct...should I use just one ounce of mix with 1 cup of pineapple and make 12 muffins? 1/12th of a box of Angel Food cake mix is 140 cals right there. Also I gave my weight watchers group this recipe last week and I hope they didn't all make it and eat it without checking it out like I did...until this morning when I could not believe that they were 20 cals cause they tasted too good for just 20 cals. Pls advise what I am missing here....Thank you. Carol

These are three points per serving - 140 cal, no fat, no fiber, 12 servings to a cake mix.
