Pastryless Beef & Cheddar Quiche
Easy to cook with many variations, this recipe is very satisfying as a main course with veggies, at lunch time with a salad or a slice as a snack.

Directions
- Best to use a tin of corned beef which you cube and put in a shallow ovenproof dish.
- Slice or dice the onions, chop mushrooms and add to dish.
- Whisk the eggs with cheese, salt and pepper and any herbs you fancy (a dash of Worcestershire sauce adds a kick).
- Pour over corned beef mixture.
- Bake in the oven at about 350 °F (180 °C) until golden and bubbling. Allow to cool for 10 minutes before cutting.
- Note: Recipe can be varied to suit whatever meat or veggies you have hanging around; peppers, chicken, ham, veggies, the only limit is your imagination! You can also make low fat by substituting the cheddar cheese for cottage cheese although not for Atkins followers!

A little high in fat, try for a leaner beef cut.

If it's too high fat you could try one of the variations i suggested - it's great with chicken, ham or whatever low fat meat you fancy or leave out the meat altogether!!
