Parmesan Crusted Chicken Tenders
Sensational low carb chicken dish.
Ingredients
Directions
- Pre-heat oven to 375 °F (190 °C).
- Scramble egg and dredge tenders through egg, then parmesan, fully coating both sides.
- Place on pan with space between each piece.
- Sprinkle with Kosher salt, cracked pepper, and dried basil.
- Cook for 15-20 minutes or until juices run clear.

This was awsome!! I made them in the oven. I also added garlic, and topped the chicken with mushrooms I cooked on top of the stove with a teaspoon of Brummel and Brown yogurt spread and roasted cherry tomatoes I made in the oven adding only salt to them.

Made these last night--SOOOOO good. I need recipes without bread crumbs for my celiac daughter.
Just a few notes:
I only needed about 1/2 the amt of parm cheese called for. (I added the rest to some mashed potatos--yum)
I skipped the salt (parm cheese is salty enough for me) but added some garlic powder on top with the basil. You could also add oregano, which would be good.
I plan on taking the leftovers & putting tomato sauce & mozzarella cheese on top, then just heating til the cheese melts.

I plan on chopping these up and putting them on top of salad/quinoa all week long. To make them even more like my favorite guilty pleasure I add a good amount of hot sauce and some cayenne to the seasoning. Not quite buffalo wings, but close!

So yummy! I used too much crumbs (used Corn Flakes crumbs) and a bit too much cheese. Next time, less of both. Cooked in the oven for about 35 minutes. Had that with some pasta and veggies! Perfect meal!!!
