Parmesan Asparagus

A yummy dish that will surprise those who don't like vegetables and even asparagus.

Ingredients

Directions

  1. Coat grill rack with non-stick cooking spray. Pre-heat grill to medium-high direct heat. Break tough ends from asparagus; set aside.
  2. Blend melted butter, olive oil, and garlic pepper in small bowl.
  3. Place asparagus in grill basket or in center of a 12x12" sheet of heavy duty foil (asparagus can be placed directly on grill parallel to grid). Brush asparagus with half of butter mixture; place on grill.
  4. Grill covered 6 to 8 minutes or until asparagus is lightly charred and tender, carefully turning once. Remove to platter.
  5. Drizzle with remaining butter mixture; toss to coat.
  6. Sprinkle with the shredded parmesan cheese. Enjoy!
  7. Note: you can use the Foreman grill instead of the grill without the tin foil and it will taste just as good.

I don't like asparagus, but I did try it. This recipe made it edible for me. But, I will not be buying anymore asparagus.

I just drizzle olive oil on washed asparagus and then sprinkle parmesan and bake for 30 minutes at 425. I turn up the heat the last 5 minutes to get it crispy and sprinkle a little sea salt when I take it out of oven. So good!

I just wanted to counter the one star given by "Weight Watchers." Whether or not the recipe coincides with someone's diet is irrelevant. Stars should be granted according to taste and accuracy. Thank you for sharing.

Only being that asparagus is free with nothing on it this recipe is valued at 6 points Looks delicious though

If you don't have a grill handy, I roast mine in the oven on 450 deg for about 20 minutes on cookie sheet, uncovered. Make sure to sprinkle with olive oil and loads of fresh cracked pepper. When you remove from oven, sprinkle with lemon juice.... awesome!

I did this on the Forman Grill and it was absolutely delicious. My husband said that we have to make this a regular side from now on and he doesn't even like veggies! haha Thanks so much for passing this along!

I'm guessing you calculated for 4 servings instead of 2. If you change to 4 the sites numbers will match yours. Oh and it's delicious too.

Sooooo yummy. Especially the charred crispy tips of the asparagus. And In my recipe it shows 113 calories, 4g carbs, 3g protein, 10g fat, 2g fiber, 9mg cholesterol and 96mg sodium. I guess when I typed this up, the site thought differently.
