Ingredients
Directions
- In a bowl, beat egg with a fork. Pour in melted butter while stirring.
- Mix in heavy cream, vanilla and water.
- Measure 1/4 cup baking mix (low carb if available). Pour into sifter and add baking soda and Splenda. Sift together.
- Blend into wet ingredients with the fork. If consistency is too thick for pancakes and another tablespoon of water.
- Spray griddle with non-stick spray or butter lightly. Place approximately 2 tablespoons of batter for each pancake.
- Brown lightly on one side then flip and cook a few seconds more and brown as preferred.
- Serve with sugar free syrup and butter.
