Noodleless Zucchini Lasagna
Tastes just like regular lasagna but without the pasta.
Ingredients
Directions
- Cut the zucchini lengthwise with a potato peeler to make your "noodles".
- Place the zucchini noodles on a plate and microwave for 2 to 3 minutes.
- In a medium sized bowl combine the ricotta cheese, eggs, parmesan cheese and spices.
- Spray a 9x13" baking dish with cooking spray like Pam. Spread 1/3 of the spaghetti sauce (low carb if available) in the pan then layer on top with half of the zucchini noodles. Next layer half of the ricotta mixture and then half the mozzarella.
- Repeat layers- sauce, zucchini, ricotta mixture and mozzarella.
- Cover with the final 1/3 of the sauce. Cover with foil and bake at 375° F (200° C) for 45 minutes.
- Uncover and sprinkle with more mozzarella cheese. Then place under broiler for 2 to 3 minutes until cheese is slightly browned and bubbly.
- Let stand 15 minutes before cutting.

This was pretty good. I used cottage cheese in place of ricotta b/c my family doesn't like ricotta and it still turned out good. I also added lean gr. beef to my sauce. Very good.

Fantastic! This was SO good! I loved it. Mine was a bit watery because of the zucchini but nothing a grated spatula can't fix! Also -- wanted to add that my husband even loved this and he is the pickiest eater I've ever known! :)

I added 1 lb of ground beef sauteed in onions and garlic, and increased the Spaghetti Sauce. It was Delish!!!!!!!!
