A very light delicious mushroom soup for Fall that's plenty filling without a ton of calories.

- Add celery, onions, mushrooms and garlic. Sauté 3 minutes or until lightly browned.
- Combine vegetable mixture and broth in a large pot; add corn and bring to a boil over medium heat.

Made this soup tonight but with some changes. Left out the butter and salt. Added hot sauce and drained black beans. Cooked the celery, onion and garlic in oil, then added all the rest at once and simmered for 30 minutes. Delicious, just extremely high in sodium. The black beans moved the calories up to 122 per cup. No big deal! Very nice.

This is a great soup. I only changed two items and it was only the amount. Instead of 32 oz of fat free chicken broth, I used 3 14oz cans for 42 oz. I only used 1Tablespoon chopped garlic. This soup is excellent and I would recommend it to anyone who enjoys mushrooms.
