Low carb Mexican flair for a lasagna with no noodles.
Ingredients
Directions
- Brown hamburger, onion, and taco seasoning. Drain the fat and then stir in the enchilada sauce.
- In a medium bowl, blend the room temperature cream cheese, egg white, spinach and chiles.
- In a greased 8x8" pan, layer 1/2 of the meat mixture to cover pan well.
- Spread spinach mixture on top of that, and then sprinkle 1/2 of the shredded cheese.
- Place the rest of the meat mixture and spread out. Sprinkle remaining cheese.
- Bake at 350 °F (175 °C), for 30 minutes.

This is the tastiest ever. I can't wait until the next meal just to heat more up to eat. I can not have too spicy so I didn't put in the whole can of diced green chiles but it was enough to give me an awesome taste. My husband said, "something smells good in here," when he walked in the house. Too bad he didn't get any. He would only eat one ingredient in the whole recipe (the taco seasoning). I shared with my parents and they loved it.

This was delicious! I used light cream cheese instead of nonfat; made it super rich& I ate 2 servings! Next meal I'm having one sieving & a side of veggies, like my Zucchini& Tomatoes recipe,or sauteed mushrooms. I meant to give this 5 stars.

Flavor was good; didn't set up quite like lasagna... it was a little thinner/runnier than that. But I would make it again because the flavor was quite nice.
