A tasty low carb Mexican flavored meatloaf.
Ingredients
Directions
- Pre-heat oven to 400° F (200° C). In a large bowl, mix the ground beef, egg beaters and spices together.
- Cut a large square of waxed paper and roll out the ground beef mixture into a flat square.
- Sprinkle with half of the cheese and half of the green chili peppers.
- Roll the waxed paper, with the meatloaf in the middle, until it shapes into a loaf.
- Carefully unfold the waxed paper from the meatloaf and remove.
- Fold the ends of the meatloaf to the cheese and chiles will not spill out during cooking.
- Place in a loaf pan. Top with other half of cheese, green chiles and sour cream.
- Bake in oven at 400° F for 45 to 60 minutes.

I used a sprinkling of the low sodium taco seasoning instead of all the individual seasonings. It turned out great. I liked it better without the sour cream.

I added salsa with the sour cream and used jarred chopped jalapeno instead of chilies, turned out good but need a little extra something, next time I will add salsa & taco seasoning in the mixture.

Better tasting and more Induction-friendly with regular cheese, regular sour cream, and regular egg (I used 1), but thank you, great recipe! Will add some salsa next time too!

this was so good! i kinda winged it after skimming the recipe, and it turns out i hardly followed the recipe, hehe, but thank you sooo much for this idea! it was fabulous and i will be making again! (i used a lot of the comment suggestions, and im alergic to sour cream so that was omitted) oh and i used two egg yolks left over from this mornings breakfast, teehee ^.^

Sooo good. I'm non-dairy so I substituted silken tofu for the sour cream and veggie cheese for the colby/jack. Mixed it all in with the meat so there wouldn't be any texture issues and it was awesome. Also used fresh jalepano's (2), and finely chopped some red onion and red bell pepper just to up the veggie count. Again - so good. And I never liked meatloaf ;0)
