Lemon Spinach

Cooked spinach with a kick.

Directions

  1. Add spinach to microwave safe bowl.
  2. Microwave for 2 minutes.
  3. Remove and stir in butter as desired. You don't need very much so add a little at a time!
  4. Squeeze a bit of fresh lemon juice on top.
  5. Salt lightly if desired.

I make this all the time- except without any butter or "butteresque" product. Instead I use fresh chopped garlic! It's delicious! If you like the buttery texture, add some olive oil to saute garlic. Also, try adding a little spice (like chopped chili peppers) for a nice kick to your tastebuds and metabolism!
