A crustless key lime pie that's low carb.
Ingredients
Directions
- Dissolve gelatin in 1/4 cup of water.
- Bring 3/4 cup water and the zest of the lime to a boil in the microwave.
- In blender, add boiling water, gelatin mix, sweetener, and milk and blend well.
- While blending, add room temperature cream cheese by chunks.
- Add juice and pulp of the lime.
- Pour into 6 serving dishes or a pie plate.
- Cool until set. About 2 hours.

Instead of Plain Gelatin and splenda, I used a box of diet Lime Jello. I dont know if thats what gave it the yucky flavor but I really don't like it very much!
