Italian Creamy Pasta
Quick and easy vegetarian pasta dish.
Ingredients
Directions
- Blanch broccoli, mange tout and courgette for 1-2 minutes; drain.
- Heat the spread in frying pan and sauté garlic and mushrooms for 2-3 minutes. Add cherry tomatoes and parsley.
- Cook over medium heat for a couple of minutes.
- Cook linguini in boiling salted water until just tender (al dente).
- Drain and mix with the vegetables, cheddar and cream.
- Heat gently and serve with salad and garnish with fresh basil.

what is the deal with the pasta? how much do you eat...is that 8oz cooked?and what are the carbs?

This recipe uses 8oz uncooked weight of pasta, so 2oz per person - a standard sized portion. Carbs aren't an issue on my diet, so I've no idea about the carb count for this recipe I'm afraid!
