Horiatiki Greek Salad

A bright, refreshing vegetable salad.

Directions

  1. Wash tomatoes and cucumbers, let dry. Cut and slice tomatoes, onion wedge, and cucumbers, then place in large bowl.
  2. Add olives and chunks of Feta cheese.
  3. Sprinkle with olive oil and oregano, then toss gently.

I make this but instead I salt the tomatoes and leave sit for 15 minutes or more. It draws the water out of the tomatoes and makes a nice brine for the rest of veggies when they are added.
