Grilled Stuffed Zucchini
Great tasting cheesy zucchini boats.
Ingredients
Directions
- Cut zucchinis in half lengthwise; scoop out pulp, leaving a 1/4" shells.
- Brush with 2 teaspoons oil; set aside. Chop pulp.
- In a large skillet, sauté pulp and onion in remaining oil.
- Add garlic; cook 1 minute longer. Add bread crumbs; cook and stir for 2 minutes or until golden brown.
- Remove from the heat. Stir in the mozzarella cheese, mint and salt.
- Spoon into zucchini shells. Sprinkle with Parmesan cheese.
- Grill covered, over medium heat for 8-10 minutes or until zucchini is tender.
- Note: you can also make them in the oven.

These were awesome! Great recipe! I had to half it to 2 servings and I did double the cheese and added a whole clove of garlic. I also baked in the oven for 30 minutes on 350 instead of grilled, but they turned out awesome! My husband LOVED them! Thanks for the recipe, we will make again and again!

I have to say I loved this recipe! Even my picky husband loved it...and since it was such a hit I made it again the very next day! I also had a few mushrooms i wanted to used so i chopped those up and added it when cooking the zucchini, and i aslo added crushed red pepper just to give it a little more spice. Both versions are delicious, but I liked your version best, but my husband liked the 2nd version, but he likes anything with a little more heat. Thanks so much..i might seriously make it again tomorrow since i have one more zucchini left. Thanks so much!

Delicious! I made this recipe the other day and it was easy, filling and delicious! I made a couple of slight edits to reduce fat and carbs just a little bit but fantastic non the less! Thanks for the idea!

Pretty tasty. I didn't have any mint on hand, but added a little red pepper flake and some lemon pepper to season it. Will make again.
