A healthy spin on a traditional favorite chicken and rice dish that's full of taste and flavor.
Ingredients
Directions
- In a medium bowl, whisk together broth, cornstarch, sugar, soy sauce, vinegar and ginger; set aside.
- Heat oil in a wok or large skillet over medium-high heat. Add scallions, garlic and pepper and cook 2 minutes. Add chicken and cook until browned all over, about 5 minutes.
- Add reserved sauce and simmer until sauce thickens and chicken is cooked through, about 3 minutes.
- Serve chicken and sauce over rice.
- Yields about 1 cup of chicken and sauce and 1/2 cup of rice per serving.

LOVED it! This was a hit with the family! I also went with the Splenda/brown rice, will have to make this again soon!

Just ate it for dinner and I thought it was so good... Will probably make it again this week... It took a little longer but worth the wait...

This was delicious. The only thing I changed was Splenda for sugar and Perdue Perfect Portions Chicken Breast (Roasted Garlic and White Wine) as it is lower in calories. Otherwise, nothing got changed. Our family loved it. Thank you moleman2000. Very nice dish and perfect nutrition.

Absolutely worth the 6 points, delicious and filling (and excellent with a side of steamed broccoli). Somewhat less spicy than what you would get in a restaurant, but that definitely makes it more kid friendly. The whole family (even my skinny and picky husband) loved this!

Pretty decent flavor. It's not as hot as I normally like my General Tsao, so I also added some hot sauce. I think the sauce could be used to marinate beef and fish too.
