Diet Rolls (Bread Replacements)
A great alternative to bread.
Ingredients
Directions
- Preheat oven to 300 °F (150 °C).
- Separate eggs very carefully (make sure that none of the yolk gets into the whites).
- Apply cooking spray like Pam on a cookie sheet. Beat egg whites with cream of tarter until whites are stiff but not dry.
- Fold in yolks, cottage cheese, Splenda. (Be careful not to break down the egg whites. Mix for no more than a minute).
- Place the mixture carefully on the cookie sheet, gently putting one 1 tbsp full on top of another until each "roll" is about 2 inches high. Repeat this until you have 6 piles.
- Place cookie sheet in the oven and bake for about 1 hour.
- Rolls should resemble delicatessen rolls.

Not sure what I did wrong but this recipe didnt work. The mix remained runny and couldnt do step 5 because of this. What did I do wrong?

Beating the egg whites is key. Lots of things can go wrong - yoke in the mixture, a little grease on the mixing bowl or beaters, humidity... It may take a few minutes to get the egg whites to stiffen into white peaks. Be careful mixing in the Step 4 ingreadients because the egg whites can collapse.

I got them to work but they didn't really cook through all the way....somewhat bread-like but not quite the real deal.

I made these last night and although they did flatten out quite a bit and can't really be used in sandwich, I think they are fantastic! They really curb my craving for bread and kinda taste like it too! will definitely be keeping some of these around at all times :) Next time I'm gonna try to make the egg whites stiffer and see it that helps them stay firm. Thanks for the awesome recipe! It works great for me when on week 1 of the south Beach Diet!

Be sure to get your egg whites to room temp before whipping and you have to whip them A LOT to make them not runny. I left out the cottage cheese and threw in a dash of Cavender's Greek Seasoning instead of the splenda - Used it for a "loose meat" sandwich with some crockpot cooked stew meat and a serving of shredded cheddar melted and stirred in.
