Cucumbers and Sour Cream

A yummy side dish with low carbs.

Ingredients

Directions

  1. Peel cucumbers and slice very thin.
  2. Pour a lot of salt over cucumbers and place cucumbers in a bowl with a lid and put in the fridge for an hour.
  3. Drain all the water from bowl and squeeze cucumbers with paper towels until most of the water is gone.
  4. Add red wine vinegar, sour cream and sprinkle with salt. Mix well.
  5. Add chopped onion (purple if available) in and mix.
  6. Place back in fridge to chill.
  7. Serve and enjoy!

I use apple cider vinegar and add some sugar to mine (grandma's recipe), but this is a staple side dish for all our holidays.

Great mindless snacking food...although I found it to be far too watery, so next time, I'll add less of the red wine vinegar.
