Sounds too simple to be true, but I'm sure it is quite tasty. Good for Atkins, any phase.

I removed the chicken and then added two cups of instant brown rice to the salsa, and simmered for about 15 minutes. This is a great recipe.

I made this on the stovetop in a skillet! It was so simply fabulous! A couple days later I saw a recipe in a magazine where they cooked the chicken breast on each side in the skillet (sprayed w/nonstick spray), after 5 min per side, they poured in 2 cups of salsa and a drained and rinsed can of black beans. Simmer 5 minutes. Add fat free shredded cheese, remove from heat, cover til melted. It was good also!

This recipe was great added yellow peppers served over white rice. Will be making this again.

I added an envelope of taco seasoning. At the end of cooking, I shredded the chicken. I added peppers, onions, and musrooms and made little fajitas. Yum!

I love it with fresh roasted garlic salsa. The left overs are just as good the next day.

Take your chicken breasts and shake on some chicken taco seasoning or Emeril's Southwestern spice. Use an interesting chunky salsa like La Victoria. This is very good and a regular in our house.
