Cheesy Spicy Cauliflower Bake

An Atkins substitution for Mac and Cheese that can also be made with broccoli.

Ingredients

Directions

  1. In a large pot add 1 - 2" hot water, place steamer basket and cauliflower. Steam for 10-15 minutes until slightly tender. Remove from heat.
  2. In a medium baking dish, place steamed cauliflower, breaking pieces apart and making an even layer of cauliflower florets on the baking dish. Set aside. Start heating oven to 450° F (230° C).
  3. In a medium mixing bowl place remaining ingredients, mix well with a spatula, add extra mayonnaise to make it somewhat spreadable. Spread cheese mixture evenly over cauliflower in the baking dish.
  4. Bake for 15-25 minutes or until cheese is melted and at desired crispiness. Serve warm.
  5. Notes: The cauliflower can be steamed ahead and chilled before adding cheese mixture. It can be further chilled and then cooked at the last minute.

very cheesey and yummy!
This was pretty good, very nice side dish to some chicken breast or some steak, I made it tonight, quick and simple.

OMG- I tried this last night, and I'm pretty sure I have a new favorite food! I didn't have cayenne pepper or paprika, so I used a little chili powder and cumin, and holy crap- AWESOME! And the cheese got a little crispy, so the texture was great. Loved it!

This was such a surprise. Very good, but I would like to see a little more "spice" to it.

It was a little "oily" after it baked up.. and I think I'm going to cut out half the salt and less garlic...but other than that, I LOVED it and my picky 16 month old even loved it. Thanks!
mine was very good but i left out the mayo (just because i hate mayo). also i stirred the cheese in (just because i hate cheese that's baked on the top of things) :D

This is just so good. I adjusted the mix of spices to my own liking. AND tonight I added shreds of deli cut ham to the cauliflower before pasting the cheese on top. SO good!
