Cheesy Chicken Fajita Lettuce Wraps
A low carb tasty fajita.
Ingredients
Directions
- Spray large skillet with cooking spray. Add chicken and cook until no longer pink.
- Add all remaining ingredients except lettuce and cheese. Cook 6-8 minutes until chicken and vegetables are tender.
- Top with cheese. Add mixture to empty lettuce leaves. Wrap.
- Add sour cream if desired.

Make sure you use low-carb BBW sauce, there is lots of high-fructose corn syrup in regular BBQ. I, personally would just leave it out. I make this all the time, except that I add chili powder and paprika. I also like black olives and avocado in my lettuce wraps.

I would leave out the BBQ sauce since most of them are full of sugar in one form or another. Since these are fajitas, try salsa instead!

Yum! Tried this for lunch yesterday and it was delicious! (Left out the BBQ sauce though).

I modified this to make cheesy chicken taco lettuce wraps. I cut out the squash and bell pepper. I used Old El Paso Enchilada Sauce and a 1/4 tablespoon of Old El Paso Tack Seasoning in place of the BBQ sauce. Topped with chopped tomato and a little sour cream. You could add salsa ontop as well, but I didn't do that. They were already delicious!
