Cheesy Chicken Cordon Bleu

A great way to have tasty chicken cordon bleu with less fat and a more flavorful coating without adding an egg.

Ingredients

Directions

  1. Split the breast and pound each out very thin.
  2. Lay out pounded breasts side by side and spread the Dijon mustard evenly over each breast, coating heavily. Sprinkle with a dash of paprika, sea salt, pepper and parmesan cheese.
  3. Fold up a slice of muenster cheese so it resembles a cheese stick, place towards one end of the breast. Do the same for both breast.
  4. Sprinkle each breast with the Italian cheese blend, concentrating slightly more atop the end of breast the muenster is on. Add dash of paprika, sea salt and pepper.
  5. Slowly roll up starting at end with muenster, tucking under and keeping cheese mixture inside. Spray each roll lightly with butter like spray.
  6. Combine remaining parmesan cheese, paprika, sea salt and pepper in a bowl; gently roll each butter sprayed, rolled up breast in parmesan mixture.
  7. Place gently into a lightly sprayed casserole baking dish.
  8. Bake at pre-heated 350 °F (175 °C) oven for about 25-35 minutes, depending on the thickness of the breast. Cook till juices run clear.

Might be tasty but it's not Cordon Bleu. Once you change ingredients you cannot name a recipe by the name of the original recipe. "Cordon Bleu" involves: meat; cheese (usually swiss); thinly sliced smoked ham; breading made of egg, flour and breadcrumbs. Variations to this are adding various ingredients, not removing. Once you remove one or more of the basic ingredients, it's not Cordon Bleu anymore. You can give the recipe your name, it's common in cuisine world.

I was looking for a LC Cordon Bleu. This hits the spot. Only 4 net carbs per serving. What a deal!

This recipe has WAY more than 12g of fat. 2 pieces of muenster alone have about 16-18g of fat, not to mention 2oz of other cheese as well? Don't rely on the nutrition info on here, it's wrong.

This was very good...wish I had a low fat/calorie "sauce" or "gravy" to serve with it...was slightly dry on outside.
