Cheeseburger Casserole

Delicious eggs, hamburger and cheese in an easy to bake casserole.

Ingredients

Directions

  1. Pre-heat oven to 350 °F (175 °C).
  2. Brown ground beef and crumble, drain any juices or fat. Add onion flakes while browning beef. You can use fresh onion as an option.
  3. In a separate bowl, beat eggs, cream, and mayo. Add shredded cheese.
  4. Using a 9x13" baking dish, put ground beef on the bottom of the pan and spread evenly. Pour egg mixture evenly over the top.
  5. Bake for 40-45 minutes until golden. Let sit for at least 15 minutes before slicing.
  6. Note: this will keep in the fridge for 4-5 days. I slice it into serving sizes and warm in the microwave. Tastes good for breakfast or as a main dish. I like to top with fresh pico de gallo and a dollop of sour cream. Enjoy!

Whole family loved it. I substituted ground turkey instead of hamburger and seasoned it with garlic, salt, and pepper. I also added tomatoes and onions to the top after it was done cooking. This can also be used for breakfast.

Used heavy cream instead of the half and half, also added a few spices that I normally add to my burgers. Family loved it and I kept the leftovers for quick meals throughout the week. Thanks

I wonder if a low fat yogurt could be subbed for the cream

The combo sounded a bit strange to me, but because of the execellent reviews, I decided to give it a try. It is very good! I think I'll try subbing Mexican chorizo sausage for the hamburger and adding some cilantro.

This recipe is wonderful for Atkins Induction Phase. I also added a whole zuchinni shredded mixed in with the ground beef and the entire family ate it even though I made them chicken and brocolli pasta! they ate my dinner too! lol

We decided to spice it up a bit w/garlic. We weren't big fans of the mayo, so we're leaving it out next time. Works even better as a breakfast casserole by using 1/2 pork sausage & 1/2 hamburger - easy brunch dish.

I have tried a similar recipe with out the cream and mayo. added chopped peppers and more cheese. This really sounds better. Not quite as rich maybe.
