Cauliflower Au Gratin Soup
A favorite dish made into a great tasting soup.
Ingredients
Directions
- In a sauce pan boil onions and peppers in broth until tender. Reduce heat.
- Cut cauliflower into bite size pieces. Steam or zap in microwave until tender.
- Cube Velveeta cheese and add to broth. Make sure not to allow this to boil otherwise it will curdle.
- Stir until cheese is melted.
- Drain cauliflower and add to soup.
- Pepper to taste.
- While not thick like "real" cheese soup it's great for a cold Winter day!

Sounds good and I think I'll try it. But rather than Velveeta Light I think I'll use smaller amount of 2% shredded cheddar.

This was a great Recipe. I wanted to use it as a main dish for lunch for my family so I added some diced chicken and ham. Along with a few spices cumin, a dash of cayenne pepper and black pepper. I was out of onion and green pepper so I added a stir fry pepper mix instead. It gave it a nice colorful and festive look. It was so filling and yummy.

I really enjoyed this cheesey flavored soup. I added a half cup of brown rice to give it more filling qualities. I will be making this again.

I think I will blend the cauliflower to make it
thicker and creamy in texture--then add 2 or more
cups of chopped, steamed brocolli
