Tasty, simple & cheap that utilizes foods you probably already have.

Directions

  1. Drain and rinse black beans.
  2. Add all ingredients together.
  3. Mix well. Letting it sit overnight makes it taste even better.

This is awesome if you add chunks of avocado as well, and serve it with whole wheat chips!!!

i added a little garlic, some grape tomatoes and cut up some turkey kielbasa from last night's dinner, plus some fresh basil along with the cilantro...like you said, good to make with what you have on hand. As I had already had 2 slices of bread for lunch, this sent me over my carb allowance for the day, but it was worth it and I had to use up the corn!!! At least it wasn't ice cream (my downfall!). Recommend even it is a little carb heavy.

It's is a very flexible dish. You can add any number of vegetables. It's especially good when you add feta cheese crumbles, jicama and green pepper. I lowered the sodium by boiling the black beans without salt.
