Baked Eggs in Canadian Bacon Cups
A yummy breakfast or brunch treat.
Ingredients
Directions
- Pre-heat oven to 400 °F (200 °C).
- Heat canola oil over medium-high heat and sauté shallot to soften.
- Add green and red peppers and stir until they are softened but colors are still bright. Remove from heat and season mixture with salt and pepper.
- Lightly grease 4 cups of a muffin tin and insert slice of bacon into each cup. Divide bell pepper mixture into the four cups.
- Crack one egg into each cup over the bacon slice and pepper mixture.
- Bake in center of oven rack for 15-20 minutes. (Lengthen or shorten time for desired yolk consistency). Make sure egg whites are solid before removing from oven.
- Remove bacon cups from muffin tin with a spoon. Season to taste!

I've done this with just the eggs and canadian bacon, it's nice to put in the oven while I'm getting ready for work.

I loved this recipe! It was really good! Something different for breakfast. I also sprinkled a little cheese on mine after I pulled them out of the oven. Also I bet adding mushrooms would be soooo good!

I love this recipe. I changed out a few items such as instead of eggs I used egg beaters I will probably try egg whites too. Instead of Canadian bacon I also switched that for turkey ham.

These were ok, but I modified alot as I like scrambled eggs better and used onions instead of shallots. It would not be bad with some cheese either. It is definitely a nice change. I used sliced turkey ham as well.
