Bacon Wrapped Jalapeno Pepper Poppers

These little gems are outstanding as a snack or appetizer.

Ingredients

Directions

  1. Cut stems off of peppers and cut them all in half longways. Remove the seeds and membranes from peppers.
  2. Mix cheddar cheese with cream cheese. Fill each pepper with the cream cheese mixture.
  3. Wrap 1/2 slice bacon around each pepper half. Place on a foiled (cooking spray such as Pam) lined baking sheet.
  4. Place in a 450° F (230° C). oven for 10-15 minutes or until bacon is fully cooked.
  5. Remove and serve when cool enough to safely eat.

This recipe was outstanding. I doubled the recipe and the last 5 minutes I broiled them so the bacon was crispy!! YUM! NOTE: Where gloves when cleaning the jalapenos. My hands burned for hours afterwards.

Am I reading this right - these are 125 calories per serving, so the above recipe for 12 servings is 1375 calories?

This IS awesome for those of us on lchf. I love each ingredient separately and together its the BOMB. A bit greasy if you eat too many and that can be hard!!!!

I make these up and freeze them when I have a bumper crop of jalapenos, pull them out of the freezer and wrap with thin sliced prosciutto and grill. Using prosciutto you don't have to use as much and it actually wraps easier

I made this back in November for my family. We loved buying cream cheese poppers from Sam's Club but on Atkins we can't have the breading. The bacon fat helps satisfy our hunger pains and we can stop after two but sometimes choose to eat more. For a while I was making them once a week and everyone at work loved them during a pot luck.

My husband has been making these for years. Try pineapple cream cheese to give them a bit of sweetness. You can also substitute bacon with prosciutto...very tasty!!!
