Bacon Rice

Tasty, filling rice dish with bacon, onions and mushrooms.

Ingredients

Directions

  1. Add wholemeal brown rice to saucepan of water and boil for the amount of time stated on packet.
  2. Fry chopped onion and mushrooms in another saucepan using low calorie spray. Alternatively, you could boil in water until tender.
  3. Grill or microwave 2 slices of lean bacon until tender.
  4. Add beef stock cube (e.g. Oxo) to rice when nearly cooked and stir in.
  5. Add cooked onions, mushrooms and chopped bacon to rice, before serving and stir in. Keep stirring until water is absorbed.
  6. Can be eaten on its own or add zero point vegetables such as carrots, cauliflower, broccoli, green beans.
