Asian-style Chicken Salad
Simple chicken salad with an Asian twist.
Ingredients
Directions
- Place 4 cups water, onion and chicken in a saucepan over medium heat. Bring to the boil.
- Reduce heat to low and cook, covered, for 10 minutes or until cooked. Drain chicken and discard onion.
- Place carrot and snow peas in a bowl. Cover with boiling water.
- Set aside for 1 minute or until bright green and tender crisp. Refresh under cold running water.
- Shred chicken. Place chicken, carrot, snow peas, capsicum, wombok, shallot and coriander in a bowl.
- Combine lime juice, fish sauce, sugar and chili in a jar.
- Pour over salad and combine. Divide among serving bowls to serve.

I don't think you can have brown sugar in phase 1

The brown sugar and carrots are not appropriate for early phases of Atkins. In fact, brown sugar is a no-no in every phase. However, you might replace that with an artificial sweetener and eliminate the carrots for earlier phases.

Calorie Counting and balance is always welcome in my kitchen but what is fish sauce?

Maybe an oriental grocer would have fish sauce. I've noticed that on Atkins, I've lost my taste for too sweet foods, so maybe a lot less brown sugar or try it without. You never know til you taste it.

Fish sauce can be found in most grocery stores in the international foods aisle, Thai food section.
I agree with other posters, no sugar ever in any phase of Atkins and carrots only in later phases and only for those who can tolerate them without stalling or gaining.
I found a pancake syrup substitute that has no carbs, that could possibly work as a sweetener in this recipe. It was in the grocery store in the section with other no sugar added foods.

Great salad! Fresh and full of flavour!! I sometimes like to add a small handfull of cashewnuts to give it some extra crunch.
