Almond & Oat Bran Pancakes

Pancakes with plenty of fiber and flavor that will stick with you all morning.

Ingredients

Directions

  1. Grind almonds to cornmeal consistency. Add baking powder, salt, and oat bran.
  2. Mix wet ingredients well and add to wet ingredients. If it is too dry add a splash of water or milk.
  3. Spray griddle with cooking spray and heat over medium heat. When a drop of water sizzles on the griddle it is ready.
  4. Spoon batter onto pan and form into 3 pancakes. Fry for about 2 minutes. Flip and fry other side.
  5. If adding fruit, place on pancake as soon as you put it on the pan.
  6. Note: I like blueberries best, but strawberries, raspberries and finely chopped apples are good too.

Reviews 
Some of the worst pancakes ever. I did have to use substitutes, like oats instead of oat bran, a regular egg instead of egg substitute, and also cottage cheese instead of ricotta cheese. My mom thinks it may have been the cottage cheese that ruined this, because when I made the pancakes, they were EXTREMELY salty. I couldn't even swallow them. I followed the recipe exactly, except with the substitutes. Also, the pancakes stuff to the grittle and were very hard to get off the pan. My mom believes this was because there was no oil in the mix. No butter, vegetable oil, or even applesauce. It just stuck. I was very excited to try these pancakes out. The idea sounded amazing. However, I doubt I will have them again.

I've made these extra easy for busy mornings, but putting all the dry ingredients into baggies that I just add the liquid ingredients to. It takes as long for my husband to make a cup of tea and instant oatmeal as it does for me to make myself pancakes and turkey sausage!
