All-Vegetable Soup

A delicious super low calorie vegetable soup.

Ingredients

Directions

  1. Put garlic, vegetables, thyme and broth into a large soup pot.
  2. Cover and bring to a boil over high heat; reduce heat to low and simmer, partly covered, about 10 minutes.
  3. Stir in parsley (or chives); season to taste with salt, pepper and lemon juice (optional).
  4. Note: if you like thick soups, consider pureeing this recipe in the pot with an immersion blender. Many variations to this recipe, add or leave out vegetables to suit your taste. Save time by using frozen vegetables instead of fresh ones (though the texture of the soup might change a bit).

This soup is very versatile. Can make as vegetarian or with meat, just add on the additional ingredients to your food log. I use 2 boxes of low sodium broth and then add water to make more broth as needed as we like our soup pretty broth-y.

This is the famous Weight Watchers Zero Points vegetable soup. Very good... but mine never turns out as broth-y as the photo. Basically a giant pot of veggies with a teeny bit of water. :)

No it needs adjustment to be good for induction. No carrots and lemon juice. I do not know how that would affect the flavor.
