Pumpkin Pie
The only real difference in using a small pumpkin vs. a large pumpkin is that the smaller ones are sweeter. Oh, and the monsters are a pain to work with in the kitchen. Just cut it into managable pieces and roast it in the oven like you would a smaller pumpkin. Or however your recipe says to cook it, roasting is what I remember my grandma doing.

Need a great low-cal dessert
Hi everyone! I need some help--there are four of us (out of 15 or so at last count) who will need a yummy dessert that isn't high calorie and is sugarless. I'm very willing to bake or do something more complicated than sugar-free jello, but I really need a recipe that the others won't be able to tell is a "dieter's dessert". I just moved, and I can't find the box with all of my recipe books in, so I really need some help here. Any suggestions?

How you handle the situation really depends on who it is. If it's a friend or family memeber who knows that you're trying to lose weight, you should feel comfortable asking them what is in the dish. If you don't feel comfortable asking and you don't want to offend the person by refusing, just ask for a small bite to try it, and tell the person that you're really not hungry. If you simply can't refuse to eat (for example when you're staying for dinner), just have a small portion, skip seconds, and get right back on track once you leave.

If you can plan ahead:
Have a good snack before you get there.
If you feel comfortable, let the person you're visiting know your diet restrictions, or request that you go to a restaraunt that you know will have acceptable options.
Avoid visiting at a meal time.
Keep ok snacks on hand in your purse or car, just in case.
Have a positive attitude, be honest, and try to be a good sport. Don't act like your diet is the raincloud over the party. Very Happy
