Recipes
I haven't seen the recipe, but it occurs to me that it may be for mini egg "muffins"? (There are 24 mini-muffins to a pan)

*That being said, I would agree with you that many people aren't aware of their "actual" consumption.

Breakfast
I used to never eat breakfast, but started a few years back. I started with either a very little bit of milk or yogurt. It was enough to begin the shift - and helped my eating habits tremendously! After a while, the rest of my meals were lower calorie (naturally), and as a sign of my metabolism picking up and actually using all the calories from the day before, after a couple of weeks, I started waking up hungry, and actually WANTED to eat breakfast. HTH!

FEEL GOOD
I agree - the 5# mark makes it seem more "real" to me - not like I lost a pound (that will be back within the week...). Congrats!

Measuring food... can a digital postal scale be used for a food scale?
I use a postal scale. It measures in 5g and .1oz increments. The only issue I ever have is if a serving size is 28g or something (because of the 5g increments). So on those things, I either add enough to where it bounces back and forth between 25-30g or just weigh out 25g and call it even. It was WAY cheaper than a "food" scale. (I think like $10 on ebay...)
