My idea of a perfect life is one where all food has the perfect balance of nutrients, and thus an apple or a piece of celery has the same value as the same amount of chocolate cake. - I would eat cookies, cheese, and mexican food for the rest of my life. Instead, my life is far from perfect in this respect. Thankfully, the rest of my life is pretty darn good.

I married my husband October 2009 in a zoo with giraffes and monkeys (By monkeys I mean our friends...) He is a chef - which is the most MIXED blessing. He CAN make anything taste great! But it all tastes so darn good that I usually could eat my weight in his cooking! :) Its true! He is astounding in the kitchen (And in all other aspects of life too! - Im lucky - very lucky!). But as much as I like to joke about and say "My husband is a chef, he is so good I'll never be skinny!" - The blame is not his. I was heavy before I met him. (AND He still thinks Im beautiful - guess he isnt perfect - his brain is a mess!)

But I am done with the blame game. I know who made me fat! And I know who is going to make me a smaller girl too.

So who is this large, but working to be smaller gal anyhow?
Im 34, tattooed, trivia nerd, book worm, music lover, writer - weirdo science loving geek who cant do math to save her life. I do a ton of crafts and participate in some unusual social groups. I dont watch TV and do not have cable. I do NOT know who you are talking about if you mention celebrities that have NOT been in movies. But I do love movies! My husband is a chef who has this wild idea that the world rises and sets between his son and I. We have two dogs who think the world rises and sets between bites of popcorn, treat bowls, and car rides out to grandma's house. Im a southern girl who transplanted to the great white north almost 10 years ago and have never had any regret about coming to Michigan. I do wish for teleportation more than I do anything else because some days - family is just FAR and it sucks.

Nuts.....
I chop them up very fine and sprinkle them on salads or yogurt.
I also have a recipe for a Roasted Red Pepper "spread/dip" that is AMAZING - And contains a bit of nuts as well. (The recipe makes about 4 cups of spread/dip and contains 1/4 cup of walnuts - so it is very logical on the fats level.
Additionally, my husband made me a dip for apples (which are NOT my favorite foods, but I want to eat more fruits so what do ya do!) using a cup of yogurt and two tablespoons of nut butter (whatever kind you like would work) and a teaspoon of honey. And the batch is almost always enough for 4 apples worth of snacks.

I suppose my advice is add in nuts WITH things. Mix them up inside of things instead of eating handfuls or something like that.

Good luck.
jas

PS - I was pretty darn afraid of nuts as well.
