Omelets
I had trouble with omelettes at first, too, because they were too bland but I've been eating them a lot the last few months. My favorite non-cheese filling (and I love cheese so this has been an epiphany) is thinly sliced shallot or onion, sauteed a bit in Pam before adding the beaten egg, and then filling the omelette with thinly sliced mushrooms and about 4 tbl of chopped cilantro. When I flip over half the omelette I put a lid on my pan so that it can cook gently through and not overcook. Tastes like a lot more calories than it is. I always use 1 egg and 2 egg whites and it makes a nice, big omelette!
