Changed Diet, Can I undo the change?
Answered my own question doing more searching on the forums.
Go to the very bottom of this post for the answer of how to push back the "start" time if you've changed to a new diet unintentionally.

I just printed out my weight history and am manually entering in historical weights, going backward from today one day at a time, until it tells me I can't go back any further.
Thought I'd post this rather than delete my original entry in case anyone else runs into this problem.

Changed Diet, Can I undo the change?
I changed my diet to "Calorie Count" because that's what I'd been doing all along, but I didn't realize it would restart my weight loss tracker and make today my new "start" date.
I know it doesn't wipe my old data entirely, but I really liked having the pop up that said how much I'd lost in total since I began in October.
Is there any way to undo this and just go back to what I had before? Or can I set it so that I was always on Calorie Count?

Calorie Count too restrictive?
I thought this calculator for figuring out your caloric needs was pretty great:

The fact that has stuck with me since my nutrition biology class in college is that your brain needs calories to work properly. That minimum daily need is something like 400-500 calories. And that's if you're not asking your brain to do any heavy lifting like problem solving or learning a new task. So make sure you're eating enough to fuel your body & your brain!
