Love comes in the form of probiotics...
Much appreciation (and many thanks) goes to my dietician as she so graciously gave me some kefir grains earlier this week. We hear about probiotics all the time and how important they are for healthy gut flora.... well, homemade kefir produces more probiotics in one normal serving than an entire bottle of probiotic pills! This morning I had my first serving of my very own homemade kefir (I admit... I was a bit skeptical) with some fresh blueberries and honestly, it was very tasty. My kefir tasted like a mild yogurt that was a little runny but definitely thicker than milk itself. Previously I thought dairy was off the table for me (except a small amount of cheese on my morning eggies) but kefir may prove to be a game changer. Making kefir couldn't be more easy and a quick search online provided tons of easy recipes using kefir -- salad dressings, ricotta-like cheese, cream cheese, smoothies, and so on -- which have renewed my interest in milk but will greatly increase the beneficial probiotics at the same time. Win - Win!

Not too bad... only gained two pounds through the holidays. I didn't go crazy but I did eat "off plan" a bit.
Had a sandwich one day (it's been months) and the bread really caused pain and discomfort for me. I guess I really do have a sensitivity to gluten! This happened twice over the holiday break and both times I related the bad feelings to the gluten in what I ate. Good to know...
