I have had quite a couple of years but life is so good. Two years ago I weighed 318 after having one of my Total Knee Replacements and had an epiphany/revelation about my weight and the condition of my body. I was utterly disgusted with myself for become the person I was. I decided I had to lose weight and was working on Judith Beck's Diet Solution. This book helped me learn to think differently about food and dieting in order to be successful on whatever diet I chose to follow. Then a friend of mine was losing quite a bit of weight doing the Atkins diet so I decided to give it a try since I had lost weight eating the Low Carb way previously. I have since had my other knee replacement and lost 85 pounds. I am know down to 23 lbs. I no longer need a walker or cane and can walk really well which is more fitting for a 59 year old woman. I have had wonderful support from my Physical Therapist, friends at church and at work. I feel like I have a new life but I do really want to get down to my goal weight of at least 130.My body seems to be at a set point right now and isn't budging. but at least I am not gaining as I continue on the Low Carb way of eating. I will persevere!

Oh, I forgot to include that in January 2013 I was diagnosed with a small breast cancer, had 3 surgeries and radiation treatment. I think my body doesn't know what hit it this year. I have only lost about 10 pounds since Jan. But at least I am not gaining!

Insulin resistance
Many people "cure" their insulin resistance with a low carb, high fat diet. Many people are able to go off diabetic medicine because their blood sugar becomes controlled by this diet alone. Do some reading. Gary Taubes book "Why we get fat and what to do about it" is excellent. Also "Wheat Belly" is a great book. Gary Taubes is also on youtube with the info. Worth looking into. Don't let people scare you from this. When the US started pushing the low fat, "whole" grains our nation saw an increasing epidemic of diabetes and obesity.

I became increasingly insulin resistant. Have been on a low carb diet, no grains, bread, rice, pasta, sugar etc. for 2 years. I have lost 90 pounds and my triglycerides are way down and my cholesterol is good. It is a healthy way to go.
Actually the brain is mostly fat and needs fat to be healthy. There are many studies showing improvement of alzheimers, MS, Parkinsons, etc. with a low carb diet. Yes we do need vegetables but we can correct many medical issues by breaking from the high starchy fruits and veggies. Lots of info out there on this stuff.

Help! How do I stop these carb cravings?
Do some reading on Low carb sites. Gary Taubes, Wheatbellies, etc. It really does work and there are so many falacies regarding cholesterol@ See such books about the cholesteral myths. It is a scam of the pharmacuetical industry in bed with physicians. I had horrible high triglycerides and they are very low now that I have been eating low carb for 21 months. Low carb is actually a very healthy way of eating and so many things have improved from eating this way. As well as controling my out of control eating habits!

what can i substitute in my coffee for cream?
I actually am using Atkins shake in my coffee. Today I used chocolate because that is what I had but I plan on getting some vanilla flavorerd. On ounce or two is not too bad.
