Coconut Milk
I use coconut milk almost in all recipes (here is one of my favourite coconut cake recipe http://coconutjuice.co/how-to-make-a-cake-with-coconut-milk/, in my opinion it tastes even better then cow's milk.

Canned coconut milk vs cartoned coconut milk
I drink cartoned coconut milk, haven't tried canned one so can't say what's the difference.
