I'm 54, the mom of three patriots who have or currently serve our country, and the wife of one very special man! I am the office manager at our church, and both of us are very involved there in church and local ministries.

My weight....pretty much a life-long struggle, but I have always had good self-esteem so I really don't recognize it until I see photos. The past five years the photos have been getting worse and worse, so here I am! Facing reality and facing the fact that I am a sugar and carb addict who needs help! Prayerfully I started this journey in May 2011 and I am so thankful that very quickly I lost my sugar cravings.

Learning to bake and cook in a lower carb way has been a huge factor for success. Working out on a regular basis has been the other factor. My family is very supportive, for this I am blessed!

Getting out of a rut
When I was trying to get below 200, I started walking. It was, hands down, the best way for me to lose. I lost more inches than pounds, but it really trimmed down my bottom half. I didn't realize it so much at first but then all my friends starting commenting. I think it is easy to look in the mirror and not really 'see'. Good luck!

Coffee
I lost 40 lbs on Atkins, and drank coffee every day. Atkins does not prohibit the use of caffeine, and if there is one thing they have done well is years of research on the effects of low carb eating. Unless you have a specific issue with caffeine, I'd say enjoy your coffee....

Low Fiber, High Sodium
I lost 40 lbs on Atkins. I too was worried about the low fiber/high sodium. I made some adjustments (was very careful about lunch meats and cheeses and was sure to drink lots of water). Getting more fiber, however, is easy. Atkins is actually quite high in fiber if you eat the recommended amount of veggies. Using flax meal daily helps. And, if you still feel like you need more fiber, use a fiber supplement.

I used the Atkins bars for a 'treat' at the end of the day. They really saved me!! Eventually I learned to bake low carb treats without sugar and that really helped. There are many wonderful websites out there of folks who have mastered the art of sugarless baking.

It really is an effective plan if you can stick with it. You will have more energy once you are not eating sugar, especially at the end of the day. And, the carbs that you will begin adding in, over time, will be healthy carbs with fiber.

Powdered Peanut Butter
I really like the PB2 as well; however, I tried one of the recipes on their website and was not too impressed - it was for peanut butter cookies and they were very dry and bland. Just wondering if anyone has any good recipes, or if it is best just used as plain old peanut butter? Thanks!!
