This is just your basic flax meal pancake with a couple of small additions. Good for OWL and beyond.
Flax meal crepe is
2 beaten eggs, add 2 tbs flax meal, and one packet of splenda(or any sweetner)
Mix together and pour into a large skillet( I use cooking spray so it doesn't stick) A large pan makes it thin like a crepe versus thick like a pancake. Cook evenly on both sides. Put on a plate and add some whipped cream. I use 2 tbs heavy whipping cream and half of a splenda packet. You can add any kind of fruit that you are allowed. I use sliced strawberries. I put the fruit on and then put small spoons of the cream all over the crepe. I then use the other half of the splenda packet to sprinkle on top like you would powdered sugar on a regular crepe. It is as low in carbs as you want to make it since the bulk of the carbs come from how much fruit you put on it.
