So I've been chatting with another member about MIM's, and since I was way low on carbs today, I decided to experiment for dinner. made one with 1/4 c. flax meal, 1 tsp. baking powder, 1 tbsp. sour cream, 1 egg, 1 tbsp. heavy cream, and 1 scoop chocolate protein powder. It was huge! Overflowed the mug and everything. It was pretty moist, and very flavorful. I topped it with butter and a cream cheese/sour cream/splenda mixture, and I felt like I was eating cake - excpet cake isn't quite that filling - lol. Pretty good!

don't like protein shakes, but now I have a reason for getting some. Makes a huge difference! Huge grin!!!

I hated the fact that I couldn't have the ordinary turkey sandwich for lunch on bread, but when I got the basic MiMs recipe, the clouds parted and I heard the choir singing (LOL). I create breakfast sausage and egg sandwiches, turkey sandwiches and burgers just like the rest of my family, except I make my own Savory MiM (bun substitute). Yummmm....Here's my recipe, that works out to be 0.93 net carbs:

1/4 cup flax meal
1/2 tsp baking powder
1/2 tsp garlic powder (I LOVE garlic)
1/2 tsp basil (You can substitute with italian seasoning)
1 tbsp olive oil
1 egg

(I use a wide/flat soup bowl that creates a bun-sized MiM.) Mix together dry ingredients in the bowl. Beat olive oil and egg together in a separate bowl until well beaten. Add egg mixture to dry mixture in bowl and mix well. Pop in the microwave for 50 sec to 1 min.

The results smell soooooo amazing. My hubby laughed the first time I talked about making my own "bread", but when he saw and smelled the results he wanted to try it as well. Now I have to hide my flax meal!!!

I love that you had to hide your MIM from him. Ok my favorite of the ones I have tried so far, and it may not be super low carb, but it is super awesome:

1/4 cup ground flax seed meal
1/2 tsp aluminum free baking powder
1 packet Stevia in the raw
1 rounded tsp vanilla flavored protein shake mix
Mix dry ingredients together.

In another bowl:
Beat one egg
Add half a banana that is cut it into small pieces
Add 1 rounded to heaping Tbsp of sour cream
1 pat of butter cut into small pieces
Mix together

Add dry ingredients to wet ingredients and mix very thoroughly scraping sides and bottom of bowl.

Microwave on high 3 minutes.

Take 2 Tbsp of butter and cut them into 3rds. When MIM comes out of microwave, shove 4 pieces down around the sides of the bowl and two down in the middle area of the MIM. Microwave another 20-30 seconds and serve

Kimberly, some say yes and some say no. Flax meal in that quantity is not, unless it's because your constipated then the book says you can have it.

Appears to be differing opinions, I can't find a definitive answer. I've been having them though as I really need the fiber.

i've only tried one and i used the Atkins recipe. it was delicious and i love the sandwhich idea!
