Today I cooked breakfast: oatmeal with homemade vanilla sugar and homemade butter. (Those last two sound impressive, but they aren't.)

Lunch: shrimp with mango and fresh basil, and rice. I cheated and had packaged apple sauce on the side, though.

Dinner: Portobello mushroom sausage with spinach with shallots, mustard, and vinegar on the side. I'm OK with including packaged sausage, though I've made my own in the past. I had part of a perfectly-ripe galia melon for dessert.

I made this almond pesto from scratch (but used boxed pasta... No odd ingredients though.)

Boxed pasta? It doesn't count as real unless you mill your own wheat. Smile

Last night I concocted a... thing. I stewed chicken in a crock pot with carrots, onions, and chicken stock. I also added turmeric, cumin, coriander, and a few other random spices. (I meant to add garlic, but forgot.) When it was done, I shredded the chicken.

When it was done, I cooked rice and red lentils and added them to the mix. My goal was to get a sort of stew, but it wound up being less liquidy than I'd planned. I could have fixed that, but it was late and I didn't care enough. I'll do it again, but next time less chicken and more lentils/rice.
