I thought I'd start a thread for recipes! If you'd like to post some of your own, keep them healthy please! Provide any and all nutritional info if you can. We are doing this thing for 12 weeks, so I'm sure everyone would appreciate meal ideas

Tonight I served Chicken Parmesan with a side of steamed broccoli.

Chicken Parm
4 chicken breasts, skinless, boneless
1 cup commercially prepared bread crumbs
1/2 cup parmesan cheese
4 egg whites
1 tbsp basil (I recommend fresh)
Veggie coating spray
2 cans Italian-flavored crushed tomatoes
1 tbsp cornstarch
1/2 tspn garlic powder
1/2 tspn marjoram
1/2 tspn basil (fresh for sauce)
1 dash worcestershire sauce
1 tspn sugar
Ground pepper to taste

Preheat oven to 350°. Combine bread crumbs, parm cheese and basil in small mixing bowl. Dip chicken in egg and dredge in crumb mix. Lay in baking dish sprayed with veggie coating spray. Bake 50-60 minutes or until done.
Sauce: Combine tomatoes, cornstarch, garlic, marjoram, basil, worcestershire sauce, sugar, and ground pepper. Simmer 15 minutes.
To serve: Place 1/3 cup sauce on plate. Place chicken fillet on top of sauce, a dot of sauce on top, and garnish with fresh chopped basil or parsley.
Serves 4.

Chicken recipe is also good for salad toppings and pasta dishes!
