Mini Challenge - Cut Down Oil - Successful
"I generally do use a cooking spray and when I use oil it is olive oil and I use just enough to saute lightly or only about 1 TBSP or less for salads because I rely on the tomatoes and balsamic to bring out the flavor in the veggies. "

Cortster's Walk and Water Wall

First day was okay. Accomplished drinking the 2 liters of water and did a modified-salad/sandwich. Did not get to take a walk (or ride my stationary bike) for the 20 minutes. I didn't get home from work until 7:30 and I go to bed around 8:30 or I'm up all night. Today is second day and I'm feeling much better about being able to accomplish water, walk and dinner salad!

Wed, 06/05/12: Water good, salad good, no walk (raining) and very tired but did do stretching as required by my doctor for FM.

I'm having a blast with this challenge! I never realized what a great effect drinking at least 2 liters of water could have on my overall well-being. Not to mention that I think I may have been confusing being thirsty with being hungry. Making all kinds of salads but having them at lunch and it occurred to me that this is a good plan for me because my big meal of the day *is* at lunch, not dinner. I snack at dinner because too much food makes it difficult for me to sleep. Discovered: fig balsamic! The Republic of Tea Strawberry Chocolate herbal tea! Weighed in this morning at 240.0! Looking forward to Week 2!

I love vegetarian. I love cooking with greens and beans. Just call me "toot"! And I lost a little weight, too!
