Crystal Light Lemonade Tart:
Ok, I wanted something sweet and I'm trying to figure out how to make something extremely low carb with heavy cream because it is high fat and very low to no carbs--depending on who you believe, and I choose to just go by the packaging which states No carbs are in my container of heavy cream. I remembered the classic Frozen Lemonade Pie made with frozen lemonade mix and cool whip put in a graham cracker crust. I looked online and there are actually several pie recipes for Crystal Light pie. BUT, they all still add milk or other extras which add carbs. So, this is what I came up with:
Crust: 1 cup Almond Meal 1/2 cup Flaxseed Meal 1/2 cup Stevia powdered sweetner --(or use whatever sweetner you desire that equals about 1/2 cup sugar.) 1 tbs Vanilla 4 tbs Butter (softened or melted)
Mix together in a bowl. Press into an 8-9 inch springform pan or tart pan. I greased the bottom of the pan, covered that with parchment paper and then greased the parchment paper; then pressed crust mix onto that. Bake in a 350 degree oven for 10 minutes. Let cool thoroughly.
Filling: 2 cups Heavy Cream (still liquid, not already whipped) 1 pkt. Crystal Light Lemonade Powder mix (2 quart size packet)
Note: the mix is very tart but seemed plenty sweet. To reduce tartness less Crystal Light powder might be used and sweetness replaced by powdered sweetner if needed.
Dissolve powdered Crystal Light by stirring it into the liquid heavy cream. Use a mixer on high to whip the heavy cream mixture for 1 or 2 minutes until volume is increased fully. Pour mixture into the pan to cover the crust. This will not make for a deep pie, but more of a tart depth of about 1/2 inch in depth. Cover and chill in the freezer for several hours or overnight. I expect this will make 8 servings.

The final result of my first attempt produced a very tart tart of about 1/2 inch depth of the filling. I am very pleased with the bottom crust, though I might try using half flaxseed and 1/2 almond meal next time to further cut carbs; and I'm pleased overall with the flavor of the filling though I do think next time I will use 1/2 a packet of Crystal Light for flavoring.
I'm already thinking of variations, such as peach tea, limeade, or raspberry lemonade, perhaps even some of the Koolaid flavors like strawberry, or some of the sugar free jello mixes.
I'm also thinking a layer of unflavored but sweetened whipped topping or a dollop of cool whip might be good too and might help cut the tartness.
I'll have to do some calculating to figure out all the numbers, but the primary goal is to keep carbs to an absolute minimum and the only carbs should be coming from the almond meal in the crust, and perhaps a bit from the sweetner.
At 8 slices the carb count will be 1.5 net carbs per slice from the almond meal.

This would be good just put in a little dessert cup without the crust or you could sprinkle a tiny bit of the crust over the top.
I have done the jello & cream and it's not bad either.

OH Yes! Imagine some of the prepared filling (I used pink lemonade) in a small ramekin with a teaspoon of sugar free raspberry syrup spread on top, kind of like a flan, a dollop of whipped cream and a sprinkling of sweetened almond meal, or a teaspoon of chopped macadamia nuts and maybe one single raspberry for garnish. I'm out of macadamia nuts or I would have tried adding them to my tart crust. You could eat it simply chilled, or frozen; this would make a great replacement for ice cream or sherbet.
