Mexican chicken soup for dinner. All about the soup today--soup for lunch, soup for dinner. I have been wanting to make a mexican chicken soup for awhile but the recipes always seem too complicated. This one was simple--and delicious. Perhaps not authentic but very good. Spiciness makes it feel more satisfying.

Think that by tomorrow I will be over the Halloween candy hangover. Today I dranks tons of water and felt satisfied, not hungry. Tomorrow will be even better.

I did buy some sprouted bread tonight--and lots of veggies. Stopped at whole foods on my way home from having an MRI. Was so nice to food shop without baby in tow. And I kept, mostly, to my shopping list. I never shop there anymore so I'm proud that I skipped over al the yummy cheeses, olives, and snacks and kept to what I need to stay on track.

MRI not so fun. Though I was so tired I fell asleep in the machine. The tech was surprised. It's so loud in there.

Have been having knee troubles lately. Hope the verdict is not too bad. (Tore my ACL in college, have had major and minor surgeries but lately I've been having a hard time with it.) I can't imagine having surgery now--though, as my friend said, it's never going to be a good time for a surgery. Just another reason to lose weight now.

mmm mexican soups have been on my mind. But the weather warmed up a tad again. ugh. I hope all goes well w/ the not so bad knee! Maybe weightoss will help ??

The recipe is Ina's Garten's on the Food Network. I posted it here on FS but they never seem to "approve" the recipes I enter. It's prob easier if you google it: "ina garten mexican chicken." It's the first one that pops up. I halved the recipe and it was still a lot. I made the chicken in the am and then the rest of it was really fast. And, yeah, I'm hoping weight loss will help. We'll see. I'm afraid of the verdict. I've been avoiding seeing a dr for years bc I don't want to face it.
