Here's a recipe to keep them in stock at your home. You can make and freeze them to pop in the microwave at those busy times for a quick easy meal.
The Ultimate Breakfast Burrito
This kick-ass breakfast burrito will have you up and running ? and ready for your morning workout ? in no time. It serves four early birds and contains only 150 calories per serving. 5 slices turkey bacon (nitrate free)
Nonstick cooking spray
6 egg whites, beaten
1 small tomato, cored, seeded, and chopped
1/2 cup low-fat shredded cheddar cheese
4 six-inch low-carb tortillas
2 cups salsa for garnish
Place the bacon between two paper towels on a paper plate. Microwave on high for 4 to 5 minutes, just until the bacon is crisp. Break into pieces. Spray a skillet with nonstick cooking spray and heat on medium. Scramble the egg whites in the skillet until almost done. Add the tomato and bacon. Cook 30 seconds to 1 minute. Heat the tortillas for 10 seconds in the microwave, or you can warm them in a pan for a minute or so. Then spoon the egg scramble in equal portions into the center of the tortillas. Sprinkle low-fat cheese on top. Fold the tortillas burrito-style and serve immediately, with salsa to taste. Recipe source-Jillian Michael
