Yesterday I had some new friends for dinner. I made homemade chicken fajitas and apple tart (which I sweetened with a minimal amount of maple syrup) Everything was super delicious and I had three very filled small corn tortillas. But ya know, I like fajitas. Everything in them is pretty healthy. I did have a couple of tbls. of sour cream but I didn't serve cheese. I made my own quacamole.
The friends are a couple that just moved into town so I was pleased when the guy finished off everything on the table saying how good it was. He is very tall and thin if you were wondering. It was really fun. I did have a bit of the sweet drink that they brought. An organic prickly pear soda. Yum.
It was my first day off the no wheat, sugar, dairy challenge. I am staying on the no sugar part with a couple of new challenges but my sugars were minimal yesterday and natural so I feel okay about a conscious cheat.
Feeling good!
Still only weighing once a week but I have to weigh in on Sunday for the end of month #1 in the 5 pound a month challenge. I think its 3 months total. And I still need to have lost 2.something pounds.
I did have another piece of apple tart for breakfast. I was so pleased I could eat it guiltfree.

Hey Kim, Wish I could have been there! Sounds nice. I felt a little frustrated having gained some weight but I think that I will weigh myself again tomorrow and see how it goes. I think that was a fluke. Today has been good so far. I sweetened the tea for lunch with a pink sweetener packet and it was WAY too sweet, so that is a good sign - my taste buds are changing. I keep forgetting to put some Stevia in my bag. I need to do that. I love guac. I make mine with jalapeño seeds and cherry tomatoes. Super yum. Now I want some!
