Finally tried one of the recipes I had saved in my cookbook. It was Zucchini muffins and they were great! Very moist, which is not what I was expecting. I am so glad these are healthy because I can definitely see myself making these more often. Can't wait to have one for breakfast tomorrow paired with an apple and nonfat yogurt :)
