I believe that I am in for quite the education. I am trying to eliminate wheat from my diet, and, like everything else, everybody and their cousin seem to have ideas, recipes, and opinions about the subject. I am finding some interesting ideas to try, and I am looking forward to doing so.

As for my outlook, I am choosing to stay positive. Still too soon to know exactly what lies before me, but I know that no matter what happens, it will all be all right.

Are you allergic to wheat? There is so much information out there now and so many studies. It's good for you. It's bad for you. I don't know anymore, lol! I just keep to the "everything in moderation" motto (unless I am allergic to it), so I can enjoy my life and food.

Well, so far, I can rule out Celiac, which is a good thing. I don't think that I am allergic to wheat, but I do believe that I have some level of gluten intolerance. Like you, I also believe in moderation, and I am learning to practice that through portion control, and journaling what I eat. And I totally agree with you about enjoying life and food! Since food is the only vice you can't quit cold turkey, balance and moderation are the only alternatives.
